1 pound rotini or other pasta
10 large chard leaves (separate the leaf from the stem and chop
both keeping them separate)
2 large onions
8 oz block feta cheese crumbled
Cook the pasta.
Saute onions and chard stems in olive oil
10 minutes or until onions are translucent. To speed the cooking
add a little hot water to the frying pan and cover.
Add the cheese and greens to the pan and cook
5 minutes stirring occasionally.
Time the pasta so that as soon as the chard
mixture is ready you can mix it with the cooked pasta.
