Braised Daikon (serves 4)
7 oz chopped seitan
1 garlic clove
2 tsp soy sauce
2 tsp sesame oil and/or canola oil
red pepper to taste (go easy)
1/2 c water
mirin and soy sauce to taste
Chop daikon into 1/2 inch chunks.
Finely chop leek and garlic. Combine with
2 tsp soy sauce. Mix in seitan.
Add canola oil to pan and saute seitan mixture.
Add daikon and red pepper and fry one more minute.
Pour water over and cover simmering over medium
heat until Daikon becomes soft (15 minutes).
